Golden Muesli - A great start to the day. Simply mix all the ingredients together, then pour into medium-size
bowl. Normal milk can be substituted for soy milk if preferred. You can store
the muesli for four hours before serving. Add more milk if too dry and serve with
dry sweet papaya or mango and mint leaves.

| juice of 4 | limes,
juiced | | 100 gms (1/2 cup) | honey |
| 2 ml (1 tsp.) | Pandan
essence (krim bai toey, sold at Thai grocery stores) | |
Shitake
Dumplings Ingredients | | 1 Tbsp | sesame
paste | | 2 cloves | garlic,
minced | | 2 cups | Shitake
mushrooms, stems remove, clean and sliced | | 1/2
cups | chopped Chinese cabbage |

carrots | | 1 tsp. | salt

round dumpling wrappers (available in Asian markets) |

| Shiitake Dumplings
- Method Heat a non-stick pan over medium heat. Add garlic and cook until it
beings to brown. Add a little water or vegetable stock to keep garlic from sticking
or burning. Add mushrooms and reduce heat. Saute until they soften and mushroom
liquid has cooked off. Add sesame paste and remove from heat. Set aside to cool.
Place cabbage, carrots, mushroom mixture and salt substitute in food processor
and pulse quickly to shred. Place a small mound of filling in the middle
of each dumpling wrapper. Fold half the wrapper over the mound to form a half
moon shape. Wet the eggs with a bit of water to seal. Steam the dumplings
in a steamer until wrappers are soft and translucent (5-10 minutes). While the
dumplings are cooking, prepare the dipping sauce by combining the ingredients
and whisking together. |
