Shiitake Dumplings - Method

Heat a non-stick pan over medium heat. Add garlic and cook until it beings to brown. Add a little water or vegetable stock to keep garlic from sticking or burning. Add mushrooms and reduce heat. Saute until they soften and mushroom liquid has cooked off. Add sesame paste and remove from heat. Set aside to cool.

Place cabbage, carrots, mushroom mixture and salt substitute in food processor and pulse quickly to shred.

Place a small mound of filling in the middle of each dumpling wrapper. Fold half the wrapper over the mound to form a half moon shape. Wet the eggs with a bit of water to seal.

Steam the dumplings in a steamer until wrappers are soft and translucent (5-10 minutes). While the dumplings are cooking, prepare the dipping sauce by combining the ingredients and whisking together.
